Yep. Not married and no kids. The best thing is that my girlfriend helps me work on the bug!! :D

I am still convinced that the 1641 should run correctly. I must be over looking something. I am going to take another shot at it when I get the chance. Any suggestion would be great.

Here is what it is doing:

Will not idle properly when warm.
Has poor acceleration
Idle RPM is very erratic
Must be advanced A LOT in order to idle decent, but still not correctly
Sounds like it has a misfire in the lower RPM range

What I have done:

The points are set correctly, Checked with a Dwell meter
The valves are set correctly, checked multiple times
I have checked for intake leaks and replaced the intake gaskets just to be sure
I have replaced the spark plugs, wires, cap and rotor
I rebuilt the carb (used an ultrasonic carb cleaner)
Set all adjustments on the carb to factory settings

Sounds like your distributor is worn. Does your Timing mark jump around at idle?

Well an update is long past due. I have been working on a little project at work. I think that after installing this the car will be much more enjoyable. I am converting the car back to a 40 horse and 6 volt electrical.
